MORNING GLORY PROTEIN MUFFINS (DAIRY FREE)

These Morning Glory Protein Muffins are an explosion of happy flavors! They have grated carrot, shredded apple, chopped pecans, orange, and ginger. Of course I made them gluten-free, dairy-free, and packed with protein! These muffins make a convenient breakfast or snack. Feel free to add raisins, coconut, or pineapple juice in place of the orange juice. You can also make these vegan by substituting the egg white for ground flax!

A study in women showed that simply increasing their protein intake from 15% to 30% of total intake caused them to consume about 440 fewer calories per day, which was enough to lose 11 pounds in 12 weeks. (source) It's no wonder! Increasing protein intake helps us moderate blood sugar, stay fuller longer, and increase metabolic rate.

Protein recommendations

If you don't have this specific protein, any vegan protein powder should work! If substituting whey or casein, I would suggest reducing the egg whites by one-quarter cup and increasing the unsweetened applesauce by one-quarter cup to increase the moisture.

Flour recommendations

I have come to really love organic oat flour in muffins! You can make it yourself by blending organic oats into a flour, and it's got a nice hearty texture and nutty flavor. Other flours that would work in this recipe include all-purpose flour, brown rice flour, cassava flour, and gluten-free baking flour. 

If you wish to lower the carbs, you can try substituting two-thirds cup of the oat flour (80g) for one-third cup of coconut flour (40g). I have found substituting all coconut flour doesn't work well because the muffins don't rise much and can have a weird texture.

Sweetener recommendations

You can really use whatever sweetener you like in these muffins, but I used a sugar free brown sugar alternative that measures like sugar. You can also use coconut sugar, monk fruit, erythritol, allulose or stevia, whatever you have on hand! Just make sure to check the conversion chart and adjust accordingly.

Other ingredients

This recipe does call for egg whites, but if you need egg-free, don't worry! You can substitute the egg whites for one-quarter cup of ground flaxseed plus one-half cup of warm water mixed together. Or, swap in a vegan egg substitute.

You'll also need about two medium carrots, one large apple, unsweetened applesauce, orange juice, and avocado oil. Feel free to swap the oil for two tablespoons additional applesauce, or use another oil or butter of choice. 

The chopped pecans and vanilla extract are optional but recommended!

This Thai Chicken & Vegetable Coconut Curry is a scrumptious meal prep idea for all you Thai fans out there! Thai cuisine is one of my favorites, so I was stoked with how authentic this simplified thai chicken coconut curry (“kaeng phet”) came out. It’s definitely a “cheater” recipe in that I used red curry paste instead of dried chilies and all the individual curry spices. But hey, it tastes amazing and comes together easily which is what I was after! I absolutely love this served over fragrant basmati rice. You could also use riced cauliflower for a low-carb version.
