S'MORES PROTEIN COOKIES (DAIRY FREE)
When that s'mores craving kicks in but you're missing the campfire - make these S'mores Protein Cookies! Each chewy cookie is loaded with fluffy marshmallow and melty chocolate. Not only are they gluten free and dairy free, these cookies are lower in sugar and higher in protein than your average cookie.

Protein recommendation
For these cookies, I used LIV Body's Lean Vegan Protein in S'mores flavor! It was the perfect use for this flavor. You should be able to substitute another vegan protein - though this will change the taste and texture somewhat. If using whey protein, I would substitute coconut flour for the gluten free flour since whey is much less absorbent than pea protein. NEVER use whey isolate for baking, always choose a whey concentrate or blend of whey isolate, concentrate, milk protein, casein, etc.
I cannot recommend collagen or egg white protein since they behave much differently than pea protein.
Flour recommendations
Again, I used gluten free baking flour in these S'mores Protein Cookies for a soft, tender crumb. You can also try all purpose flour, brown rice flour, buckwheat flour, cake flour, cassava flour, or oat flour. If substituting whey for the vegan protein, I would suggest coconut flour to help absorb moisture like pea protein does.
I cannot recommend almond flour here, since it behaves SO much differently than baking flour. It just doesn't hold things together the same!
Sweetener recommendations
For sweetener, I really like this brown sugar alternative that's free of stevia and erythritol. It also has allulose which helps give the cookies a chewy texture! That said, you can use any brown sugar alternative that measures like sugar, or regular brown sugar.
Wet ingredients
For the wet ingredients, you're going to need vegan butter, egg whites, and almond butter. For lower fat cookies, you can swap the vegan butter for unsweetened applesauce!
Egg whites add more protein and help hold the cookies together. If you can't have eggs, you can try aquafaba (the liquid from chickpeas), or a vegan egg replacer.
The almond butter can be swapped for any nut or seed butter you like! I am not sure substituting more butter will give a similar result, but you're welcome to try :)
Add ins
Of course, these wouldn't be S'mores Protein Cookies without some chocolate chunks and marshmallows! I used these dairy free chocolate chunks and these vegan mini marshmallows. Please note than regular mini marshmallows will melt and disappear when baked, so it's essential to use vegan marshmallows!
