SKILLET PROTEIN BROWNIE (DAIRY FREE)

If you love brownies like I do, this Skillet Protein Brownie is a satisfying, dairy free option with plant based protein. It has a moist, fudgey texture that's delicious on its own, and even better with dairy free vanilla ice cream and berries! This shareable treat is low in sugar and high in fiber with a whopping 20 grams of protein per serving! It's the perfect healthy dessert (or even breakfast).

Did you know? Some studies suggest that eating almonds can boost your metabolism slightly, resulting in a small but significant reduction in body weight and overall body fat! (source) Feel free to substitute another nut or seed butter for the almond butter if needed.

Protein recommendation

For this Skillet Protein Brownie, I used LIV Body's Lean Vegan Protein in Chocolate flavor. I love that this flavor has no stevia or erythritol, yet has the perfect amount of sweetness without being overpowering. It was perfect in these brownies! You should be able to use another plant based protein powder, but keep in mind, anytime you use a different brand, or especially type of protein (whey, soy, etc.) - you're going to end up with a different end product (flavor, texture, etc.)

Other dry ingredients

The other dry ingredients you'll need are gluten free baking flour, sugar free sweetener, cocoa powder, and baking soda. 

For the gluten free flour, I prefer this one. You should also be able to substitute cake flour, all purpose flour, oat flour, or cassava flour. 

For sugar free sweeteners, I really like this one because it's free of stevia and erythritol for those who may be sensitive, and it bakes and measures like sugar. Of course, you can use any granulated sweetener you enjoy! Just make sure to check the brand conversion chart if it doesn't measure cup for cup like sugar.

For the unsweetened cocoa, you can use Dutch cocoa, black cocoa, cacao powder, or regular unsweetened cocoa powder. This is a high quality cacao powder that I use.

Wet ingredients

For the wet ingredients, you're going to need almond butter, brewed coffee, egg whites, and pure vanilla extract.

Now, the almond butter I used was rather "drippy," so if yours is thick and creamy you may need to add a little water for a spreadable batter. You can also substitute any other nut or seed butter you have on hand!

The brewed coffee is optional, but really brings out the chocolate flavor. It doesn't taste like mocha, just a deeper chocolate flavor profile. If you don't like coffee, just use water or milk! 

The egg whites add extra protein, which is why I added them! However, if you can't have eggs, just use water for a more gooey and fudgey version.

Best sugar free chocolate

It's really hard to find chocolate that's dairy free and sugar free, but I tried this one that's both! If you care more about dairy free, I would recommend this one, or if you're more interested in sugar free, try this one
