HEALTHY KUNG PAO CHICKEN (GLUTEN FREE)
This Healthy Kung Pao Chicken has become one of my favorite stir-fry recipes! It's got crunchy almonds, tender chicken pieces, and colorful vegetables - all in a savory, lightly sweet sauce with a subtle kick of Sichuan pepper. This recipe is gluten-free and actually not very spicy. All of my kids loved it! And it's surprising how wonderful almonds and celery are in this dish. You've gotta try it!

These Chocolate Glazed Protein Donuts are protein-packed and macro-balanced for the perfect sweet breakfast or snack! Each tender chocolate cake donut is covered in a rich chocolate glaze (and sprinkles if you're feeling "extra"). I love that they're low in sugar, gluten-free, and dairy-free! You can easily make them vegan by swapping the egg whites for a vegan egg substitute.

This recipe can be made dairy-free using plain unsweetened coconut yogurt, or gluten-free using quinoa instead of the couscous. For vegan, you could try marinating tofu in the spices, olive oil, and lemon! However you make it, I hope you enjoy!

It’s also vegan and gluten free, with a healthy serving of plant based protein. Yes, my obsession with carrot cake is real and this version did not disappoint!

I am always looking for new ways to make salmon, and this Lighter Coconut Curry Salmon is a winner! It's got flaky salmon, a flavorful coconut curry broth, fresh spices, and tender vegetables. I love it served over basmati rice! This recipe is lower in fat, high in protein, dairy free and gluten free.

FROSTED VEGAN PROTEIN BROWNIES
These Frosted Vegan Protein Brownies have only five main ingredients, are flourless, gluten free, and protein packed. The frosting is optional, but delicious! You can easily make these nut free using sunflower butter in the brownies and vegan butter or coconut butter in the frosting.

LEMON POPPYSEED COLLAGEN PROTEIN MUFFINS
These Lemon Poppyseed Collagen Protein Muffins are gluten-free, dairy-free and easily made Paleo! I love making baked goods with some sort of protein because it transforms them from a “treat” to a substantial snack that will hold you over for hours. I mean, why NOT have fluffy lemon poppyseed muffins with sweet citrus flavor, no added sugar, and the added benefits of collagen?

CHICKEN WILD RICE SOUP (DAIRY FREE)
Still on that soup kick and this one's a goodie! I made this Chicken Wild Rice Soup dairy free, gluten-free, macro-friendly, and loaded with flavor. It took several tries to perfect this soup, and it's a winner! It's got hearty wild rice, tender shredded chicken, delicious mushrooms and fresh herbs all in a thicker cream broth.

PROTEIN FERRERO ROCHERS (VEGAN)
I am feeling in the Valentine's Day spirit a little already (and always craving chocolate) so I made some vegan Protein Ferrero Rochers! They have a chocolate hazelnut filling with a roasted hazelnut in the center, surrounded by crushed vanilla wafer and coated in vegan milk chocolate. You can also roll them in crushed hazelnut like I did for extra crunch! While these aren't super high in protein, they offer a little boost. These chocolates are also lower in sugar, higher in fiber, and overall BIGGER than the world-famous Ferrero Rochers.

HIGH PROTEIN MINESTRONE SOUP
I just love a good minestrone soup. However, minestrone is lacking in protein, at least not enough to make a balanced meal... so this High Protein Minestrone Soup was born! It's got Italian spices like basil and oregano, diced tomatoes in flavorful broth, tender pasta, kidney beans, chickpeas, carrots, celery, onion, fresh garlic, and Italian seasoned ground turkey for some extra protein. This soup is comforting, nourishing, and very filling! Bonus - it's also gluten free, dairy free, and macro-friendly.

ICED GINGERBREAD PROTEIN LOAF
This Iced Gingerbread Protein Loaf is irresistibly delicious... but also... low in sugar, gluten-free, dairy-free and boosted with protein! I love the rich molasses, bright ginger, and warm cinnamon flavors in this loaf. It's topped with unbelievably sugar free vanilla icing, too! This loaf makes the perfect protein snack with coffee or tea.
