APPLE SPICE PROTEIN BUNDT CAKE
This Apple Spice Protein Bundt Cake turned out so perfect! You'll love this springy spiced cake loaded with tender apples and drizzled with caramel. Best news ever - it's gluten free, dairy free and low in sugar with added protein! I used collagen since it makes baked goods super tender and is virtually undetectable. A must-bake this fall!

Did you know? Type I collagen is the most common type, found in all connective tissue. (source) Marine collagen is particularly high in type I!
Collagen recommendation
As a matter of fact, I used LIV Body's flavorless marine collagen in this recipe! It dissolves easily into the batter and while you can taste it in the batter, it is undetectable in the finished cake. I do not recommend substituting other types of protein in this recipe (whey, casein, pea protein, vegan blends) since they all behave much differently than collagen. However, you can substitute one-third cup (40 grams) of flour for the collagen if omitting.
Flour recommendations
I used gluten-free baking flour for this recipe, but you could also use regular all-purpose flour, cake flour, cassava flour, fine oat flour, sweet white sorghum flour, or spelt flour. Just make sure it's fine in texture and measures like regular flour! I am not sure how coconut or almond flour would work in this recipe since I have not tested them.
Sweetener recommendations
To add rich flavor to this cake, I used a sugar-free brown sugar alternative. I just love the hint of molasses flavor! You can use any low-calorie brown sugar alternative, like Lakanto Golden, Sukrin Gold, Swerve Brown, or Truvia Sweet Complete. Baking stevia, granulated erythritol, granulated monk fruit, or a granulated sugar like coconut sugar will also work (but will taste less rich). If using stevia extract or drops, please refer to the brand-specific conversion chart!
Egg substitutions
This recipe does call for four whole eggs, but you can substitute one cup of egg whites or egg replacer as well. You can also use one-quarter cup of ground flaxseed soaked in half a cup of warm water for egg-free.
Other ingredients
The only other ingredients are unsweetened applesauce, vegan butter, spices, baking powder, and salt. The vegan butter can be swapped for coconut oil if you prefer! For the spices, I used cinnamon, nutmeg, and cardamom - but you could also substitute one tablespoon of apple pie spice!
Caramel sauce
You can either use store bought sugar free caramel sauce or make your own like I did in this Apple Caramel Protein Scones recipe. Or, leave off the caramel altogether!
