I don't know about you, but I'm a huge chocolate mint fan! These vegan Chocolate Mint Protein Brownies combine rich fudge brownies with mint chunks and mint cream frosting. They're simply divine. Oh and you'll love this... each brownie is just over 100 calories with 7 grams of protein, flourless, and gluten-free!
Did you know? Mint helps relax the digestive tract which seems to help relieve indigestion and irritable bowel syndrome. (source)
Protein recommendations
I used LIV Body Lean Vegan Protein in their new Chocolate flavor for these brownies. I love that there are no artificial ingredients! Their new formula actually only has a few ingredients: pea protein, alkalized cocoa powder, natural flavor, salt, Reb M (from fermented sugarcane), and iron chelate. You can use my code "SARAHWILKINS" for free shipping on all LIV Body orders :)
I haven't tested these with other vegan protein powders, but it should work just fine (you may need to adjust the amount of water or baking time). Casein is more similar to vegan protein than whey (proceed at your own risk!), but collagen is much too different to be substituted.
Sweetener recommendations
You can use any sweetener that measures like sugar in these brownies. I really like this monk fruit allulose blend, but you can use any monk fruit blend, granulated erythritol, baking stevia, or coconut sugar (will add more calories and sugar). You can also use stevia drops or more concentrated sweeteners, just make sure to adjust the amount.
For the dairy free yogurt, look for one that's thick with a little protein, and is lower in fat and sugar. You can substitute mashed banana for the yogurt and applesauce. You can also swap the almond butter for cashew butter or sunflower seed butter if you prefer. The baking soda, vanilla, and mint chips are all optional but improve the flavor :)
Mint cream frosting
The mint cream frosting only has four ingredients: powdered sweetener, dairy free cream cheese, natural green food coloring, and pure peppermint extract. You only need one or two tiny drops of coloring and extract each! The best cream cheese brands I've found are Kite Hill, Simple Truth, and Tofutti. Be sure to use a sweetener that measures like sugar here!

Ingredients
1/2 cup vegan protein powder* (I used LIV Body brand in Chocolate flavor, code SARAHWILKINS for free shipping)
1/2 cup dark unsweetened cocoa (like Dutch, alkali, or black cocoa)
2/3 cup sugar free sweetener* (I used one that measures like sugar)
1/2 tsp. baking soda (optional)
1/2 cup almond butter* (or other nut or seed butter)
1/2 cup plain dairy free yogurt*
6 tbsp. unsweetened applesauce*
1/2 cup water (adjust depending on protein used)
1/2 tsp. pure vanilla extract* (optional)
3 tbsp. dairy free mint chips (optional)
Mint cream frosting:
3/4 cup powdered sugar free sweetener* (I used one that measures like sugar)
7 oz. dairy free cream cheese* (like Tofutti or Kite Hill brand)
1-2 drops pure peppermint extract*
1-2 drops natural green food coloring*
*See blog for notes and substitutions.
Directions
Preheat oven to 350 degrees F.
Mix together dry ingredients (through baking soda) in a medium mixing bowl.
Add wet ingredients (through vanilla) and mix until no dry clumps remain. Stir in mint chips if using.
Line a 8”x8” baking pan with parchment paper or coat well with cooking spray.
Spread brownie batter on the bottom on the pan evenly (batter should be thick).
Bake in your preheated oven for 20-25 minutes. Cracks should be just starting to form on the top and the center should be gooey but set.
Let brownies cool completely before cutting, as they will continue to set. You can place the cooled pan in the fridge for 30-60 minutes to speed this up!
While brownies cool, combine frosting ingredients until smooth. Spread over top cooled brownies and drizzle with dark chocolate if desired.
Cut into 16 equal pieces (4x4) and enjoy! For larger brownies, cut into 9 pieces. Leftovers will keep in the fridge in a sealed container for at least a week.
This Protein Apple Crisp for One has warm sweet-tart apples, rich flavors of brown sugar and butter, and a crunchy oatmeal streusel on top. Perfect with melty vanilla ice cream! Did I mention it’s healthy and under 300 calories for the whole thing? You know what that means… no self control needed! This is one of those recipes I make over and over.
Bored of the same old meal prep chicken? This Peachy Jalapeno Grilled Chicken has so much flavor between the sweet peaches and kick of jalapeño. It’s a longstanding favorite at our house. We love it for grilling, meal prep, or a delicious weeknight dinner! It’s not what most would consider “spicy,” but if you really can’t stand the heat, omit the jalapeño for a delicious peach glaze! This recipe is also gluten-free and dairy-free (yay).
These scrumptious Apple Cider Protein Donuts aregluten free, vegan, and macro-friendly! They have a crispy exterior you’ll swear is deep-fried, and a scrumptious cinnamon “sugar” coating. I am contemplating making a third batch… they’re that good. Hard to believe there’s only 1 gram of sugar per donut!
