LEMON POPPYSEED COLLAGEN PROTEIN MUFFINS
These Lemon Poppyseed Collagen Protein Muffins are gluten-free, dairy-free and easily made Paleo! I love making baked goods with some sort of protein because it transforms them from a “treat” to a substantial snack that will hold you over for hours. I mean, why NOT have fluffy lemon poppyseed muffins with sweet citrus flavor, no added sugar, and the added benefits of collagen?
CHICKEN WILD RICE SOUP (DAIRY FREE)
Still on that soup kick and this one's a goodie! I made this Chicken Wild Rice Soup dairy free, gluten-free, macro-friendly, and loaded with flavor. It took several tries to perfect this soup, and it's a winner! It's got hearty wild rice, tender shredded chicken, delicious mushrooms and fresh herbs all in a thicker cream broth.
PROTEIN FERRERO ROCHERS (VEGAN)
I am feeling in the Valentine's Day spirit a little already (and always craving chocolate) so I made some vegan Protein Ferrero Rochers! They have a chocolate hazelnut filling with a roasted hazelnut in the center, surrounded by crushed vanilla wafer and coated in vegan milk chocolate. You can also roll them in crushed hazelnut like I did for extra crunch! While these aren't super high in protein, they offer a little boost. These chocolates are also lower in sugar, higher in fiber, and overall BIGGER than the world-famous Ferrero Rochers.
HIGH PROTEIN MINESTRONE SOUP
I just love a good minestrone soup. However, minestrone is lacking in protein, at least not enough to make a balanced meal... so this High Protein Minestrone Soup was born! It's got Italian spices like basil and oregano, diced tomatoes in flavorful broth, tender pasta, kidney beans, chickpeas, carrots, celery, onion, fresh garlic, and Italian seasoned ground turkey for some extra protein. This soup is comforting, nourishing, and very filling! Bonus - it's also gluten free, dairy free, and macro-friendly.
ICED GINGERBREAD PROTEIN LOAF
This Iced Gingerbread Protein Loaf is irresistibly delicious... but also... low in sugar, gluten-free, dairy-free and boosted with protein! I love the rich molasses, bright ginger, and warm cinnamon flavors in this loaf. It's topped with unbelievably sugar free vanilla icing, too! This loaf makes the perfect protein snack with coffee or tea.
HEALTHY SWEET & SOUR MEATBALLS
These Healthy Sweet & Sour Meatballs are based off a favorite Taste of Home recipe, modified to reduce the sugar and fat. It's got the perfect balance of sweet and sour, tropical pineapple, bright peppers, and tender homemade meatballs. It's gluten-free, dairy-free, and egg-free too!
PUMPKIN SAGE SAUSAGE PASTA
This Pumpkin Sage Sausage Pasta is next level! It has roasted pumpkin chunks, creamy pumpkin sage sauce, and juicy Italian sausage. I like to add a little Parmesan cheese on top but that part is totally optional. This recipe is otherwise dairy-free, gluten-free, and macro-friendly as well.
SWEET POTATO COLLAGEN PROTEIN WAFFLES
I love a good waffle and these Sweet Potato Collagen Protein Waffles did not disappoint! They've got a tender, moist texture thanks to the sweet potato and are also gluten-free, dairy-free, and low in sugar! I love these waffles topped with pomegranate, coconut yogurt, and maple syrup... but they're really a blank canvas for whatever you enjoy!
SLOW COOKER WHITE CHICKEN CHILI
This healthy Slow Cooker White Chicken Chili is made with dried whole beans not canned! I also used raw chicken breasts - no more hunting for rotisserie chicken! All you have to do is layer everything in a crockpot or slow cooker, then leave overnight for the best white chicken chili the next day.
PUMPKIN PIE PROTEIN TRUFFLES (VEGAN)
Pumpkin and white chocolate is one of my favorite fall flavor combos! These Pumpkin Pie Protein Truffles taste like pumpkin pie rolled into balls and smothered with rich white chocolate. They're also gluten-free, dairy-free, vegan, and easily made low carb and keto. So irresistible I've made two batches already! Literally cannot distinguish these from full sugar treats.
LIGHTER CHICKEN MARSALA
This Lighter Chicken Marsala is a macro-friendly take on my favorite Italian-American dish. It satisfies in every way! The fork-tender chicken filets are smothered in rich marsala sauce with mushrooms, perfect over a bed of buttery noodles. It's also low-fat, low-carb, high-protein, gluten-free and dairy-free! An absolutely flavorful dish that tastes even better as leftovers.

Apple desserts have to be my favorite - and this Protein Apple Crisp did not disappoint! Baked cinnamon apples are layered between two buttery layers of oat crisp, with a hint of cardamom for those "apple pie" vibes. It's the perfect healthy dessert topped with your choice of dairy-free or protein vanilla ice cream!
